Fish Tacos with Spicy Mango Salsa Recipe

- ½ lb cod fillet cut into 3 by 4 inches
- 1 teaspoon paprika
- ¼ teaspoon cayenne pepper
- ½ teaspoon cumin
- salt to taste
Mango Salsa
- ¾ cup mango chunks
- ½ cup pineapple chunks
- ⅓ cup cilantro
- ¼ onion chopped
- 1 jalapeno chopped
- 1 tomato
- juice of 1 lime
- ¼ teaspoon cayenne pepper
- salt to taste
CREMA
- ¼ cup sour cream
- 1 tablespoon mayonnaise
- salt to taste
- cabbage for topping
Sprinkle paprika, cayenne pepper, cumin, and salt over the fish and shallow fry. Set aside until you make the salsa.
Combine mango, pineapple, cilantro, onion, jalapeno, tomato and cayenne pepper in a blender and blitz until chunky. You don't want to puree it.
For the crema, mix sour cream and mayo. Add salt to taste.
Assemble your taco, top with the mango salsa, crema and thinly sliced cabbage and enjoy!
