Ingredients

  • 3 fillets of breast tenders
  • ½ teaspoon each of salt, pepper, cumin and cayenne pepper
  • 1 can of stewed tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ packet spaghetti or any pasta of choice
  • 3 cups water
  • 5 basil leaves
  • 2-3 tablespoon sour cream
  • 1 tablespoon mild hot sauce such as Tapatio

Basil Vinaigrette

  • 3 basil leaves
  • 2 tablespoon extra virgin olive oil

Instructions

  • Season breast tenders with salt, pepper, cumin and cayenne pepper.
  • In a medium-sized pot, sear the fillets for 2 minutes on each side on high heat.
  • Lower flame to medium and pour in stewed tomatoes and add garlic powder, onion powder, oregano and salt.
  • Break spaghetti sticks in half and add that to the pot along with water.
  • When spaghetti softens (about 6 mins) stir in basil leaves and let the pasta simmer for 15-20 minutes.
  • Once pasta is cooked all the way through, turn the flame to very low and break up the chicken tenders with a fork (chicken should easily flake).
  • Stir in sour cream and hot sauce and taste for salt. If you like it creamier/spicier, add more sour cream/hot sauce.
  • For the basil vinaigrette, soak a few basil leaves in heated extra-virgin olive oil for a minute or two and drizzle on top of the pasta and stir.
