Fudgiest Brownies You Will Ever Make!

Ingredients

  • 7 oz dark chocolate or semi-sweet if you prefer
  • ½ cup butter
  • 3 large eggs
  • 1 cup sugar you can use all white (which I typically use) OR use a combination of ¾ cup white and ¼ cup brown sugar
  • 3 tablespoon cocoa powder unsweetened
  • cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ cup chopped walnuts optional
  • ½ cup semi-sweet chocolate chunk or chips

Instructions

  • Preheat oven to 350 degrees F and line an 8 by 8 inch pan with foil or parchment paper.
  • Melt chocolate and butter over a double boiler by placing a glass bowl over a pot of simmering water making sure the water does not touch the pan. If using microwave, heat for 10-15 seconds intervals, stirring in between until chocolate and butter have melted.
  • Next, beat eggs in a separate bowl until pale and slightly fluffy, and using a whisk or spatula mix the melted chocolate in the eggs. Add sugar and mix really well. I prefer this updated method results in the perfect crackly top as opposed to adding egg directly to the chocolate.
  • In a separate bowl, mix together cocoa powder, salt and flour. Add this to the batter along with wanuts and chocolate chunks.
  • Mix the batter just until all the ingredients are incorporated. Don't overmix.
  • Transfer the batter to the pan and top with additional nuts.
  • Bake Fudge Brownies for 25-27 minutes. Begin checking after 20 minutes by inserting skewer in the center of the brownies. If it comes out with really moist and slightly gooey wet crumbs attached to it, pull out the pan. The residual heat will continue to cook it. Do not overbake.
  • Let cool for an hour before slicing into squares.
  • Serve a la mode!

Notes

  • The biggest tip I can share is to really under bake the brownies till a skewer inserted in the center comes out really moist, almost a bit wet and gooey. This will ensure that as the brownies cool, they set to the perfect fudge that will last for days!
